LAMB CHILLI CON CARNE

Preparation

  1. Heat oil in pan and add the onions, followed by rosemary until the rosemary releases its oils approx. 3-4 minutes.
  2. Add the garlic, peppers and minced lamb. Cook the meat until it separates out approx. 10 minutes.
  3. Add the kidney beans followed by the tomatoes, cumin, chilli powder and cook for 15 minutes until bubbling.
  4. For the rice cook as per pack instructions.
  5. Serve with sour cream, guacamole and jalapeños.

Ingredients

  • 2 pouches Shahi Dinner Wholegrain Basmati 
  • 1 tbsp. olive oil
  • 2 sprigs of rosemary chopped
  • 1 large white onion chopped
  • 1/2 red pepper diced
  • 1/2 orange pepper diced
  • 2 garlic cloves, peeled and chopped
  • 1 heaped tsp. hot chilli powder
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 500g ground lean lamb
  • 400g can chopped tomatoes
  • 400g can red kidney beans
  • sour cream
  • guacamole
  • jalapeños (as desired)
